Restaurant Elverket

While the number of tables and active serving area decreased by 30%, sales increased by 40% after just two months and continued to rise steadily.

The four owners of the Elverket restaurant had a vision of creating a brasserie, and the final solution was a flirtation with classic brasserie decor. The biggest alteration was moving the bar area to the restaurant entrance so that staff, even when busy, could easily greet guests as they arrive. Three different zones were created using several “favoured tables” in various places within the zones, instead of just one “favoured table” that is common at many other restaurants. This provides a greater spread of guests throughout the restaurant. Furthermore, seating in the lounge area was designed to accommodate 1.5 persons per seat space. For instance, large armchairs, sofas and chaise lounges, allow guests to sit by themselves or share a space with a friend if the restaurant is busy. The lounge can accommodate 70 guests if necessary, but this design feature makes the area look inhabited even if there are only a few people there. The restaurant is now a retro brasserie with exceptional details such as tiled walls with yellow grouting, brass lamps and stained wood.

Environment

Much of the existing interior was kept and used as inspiration. The floors, for instance, were sanded rather than replaced. Table legs were varnished and new table tops were put on top of them.

Economy

Although the schedule was tight, concept, design, procurement and renovation were achieved within the space of 8.5 weeks, and the project was completed according to budget.

Results

While the number of tables and active serving area decreased by 30%, sales increased by 40% after just two months and continued to rise steadily. An important requirement of the new decor, in addition to the desire for a brasserie, was to create an environment that suited the owners and their different personalities. This is one of the major reasons for Elverket’s success. The owners who work in the restaurant are proud of the new design and feel their personalities are reflected in it. Through this it becomes even more credible for them to sell their product, namely a pleasant experience for their guests.
